1. Small problem. When your aligning your telescope and pick the star you want to use on the hand controller how do you which one it is when you look through the finder scope/eyepiece?. I've no problem picking finding the star visually. Any help appreciated.
2. Also how do you get rid of dew on the corrector plate when you're observing. I left the scope last night for 10 minutes and when I came back it was covered in dew. I tried point the ota at the ground but this didn't appear to work.
3. When the telescope is adjusting to the temperature outside do you leave the covers on or off the finder scope/ota

A few short questions below:

I guess that mainly comes down to experience. But it's generally quite obvious because the stars chosen as alignment stars are generally very very bright.
2. Also how do you get rid of dew on the corrector plate when you're observing. I left the scope last night for 10 minutes and when I came back it was covered in dew. I tried point the ota at the ground but this didn't appear to work.
You could get some form of dew protector either one that GENTLY heats the corrector plate or one that simply puts a big tube out in front of it so the dew which is falling straight down won't hit the plate. Personally, I use a hairdryer to gently heat the corrector plate and get the dew off.
3. When the telescope is adjusting to the temperature outside do you leave the covers on or off the finder scope/ota
Not sure what advice to give on that one, I'll leave that to someone else.

Normally, the hand controller will use just the higher magnitude stars. Visually, it would be the brightest star in your field of view once it thinks it has it.

10 minutes is not long enough. You should have perhaps put it outside at dusk, giving it plenty of time to acclimatise to the cold after coming from inside a warm environment. Also, on the coldest of night, power-assisted means are encouraged - hairdryer, dew heater (most recommended). You'll need either a main operated power supply, or a suitable charged up power pack (like the car starter packs).

Off, but not pointed upwards.
