New C11 Dovetail fitting

Hi all,
Tried Scopes and Space by email to no avail so i hope you can help me. As a newbie I am totally out of my depth so bear with me.
I bought a Celestron C11 with a CG5 tripod last year and whilst i was starting to get the hang of Polar alignment, FOV etc I found the CG5 was not up to the job. I have now obtained a CGEM DX mount/Tripod and thus have had to change the dovetail on the C11. My question is about the correct fitting.

What is the purpose of the third handled screw in the middle of the Dovetail?
Should I also remove the third screw on the C11 to fit the handled screw?
I didn't want to remove it in case it is holding a mirror / lens?
Your advice is greatly appreciated

Please do not remove the third as its part of the 6 sets screws that hold on the mirror casing on. If you are unsure you can call me on my mobile 086 3000518 and I’ll talk you through it.
