The weight is a concern as I don't want to overload the mount, carbon fibre will really drive up the cost, so it could be down to the 65mm, still early days though.

HI There, your total payload, with the star adventurer, is 5 kg,
2.5kg =80mm scope
1 kg dslr+ t adapter
Finder scope and other bits added.
then there your guide scope and camera..?
A couple of good fixed focal length lens say , a wide angle , and a 300mm,
would surely save you a load off hardship and cash.

If I were to consider a lens, would adding a teleconverter be an option? My Nikon D7000 is a crop sensor, therefore, the effective focal length of a 300mm lens would be 480mm, a 1.6X teleconverter would bring that to 768mm. I know that I will lose about 2 f stops, but as I will be shooting the moon and planets and the sun, a longer focal length is not a problem.

Paul what kind of 300mm lens are you looking at ? If it's a 70 to 300mm for about 250 euros, it's a waste of money to try and use a tele converter on it.
