It's really quite difficult to know how Jupiter looks in perfect seeing - it doesn't happen very often around here, and when it does I'm in a rush to attach the camera and computer gear so I'm not looking through an eyepiece
but I have seen it visually a few times in very good seeing, and the problem with Jupiter is that its so very bright that the eye (which is dark adapted!) gets totally blown away by the brightness and can't really see all the detail that's available. If you used a moon filter or something to darken the image then you'd likely see a lot more but I don't have one of those.
I believe that most of this detail can be seen visually with the right eyepieces and/or filters, but that would be very rare and requires a lot of patience and observational skills.
It's much easier to capture it with a camera than it is to see it visually
